Several years ago, Monsterville Horton started wine classes in Houston that became some of the most popular in the nation. The popularity of these classes sprung from the belief that providing great wine, delicious food, and world-class instruction at a reasonable price, in a fun, unstuffy atmosphere, would get people excited about wine, and would assist in furthering what was already fast becoming a wine culture in the Bayou City.

Fast forward nearly 8 years and Houston has arrived as a "wine lifestyle" city! Wine is everywhere, and the variety of wine available from around the world continues to grow as producers the world over take notice of our wine consumption numbers. What hasn't kept up is the availability of world-class wine education. However, that's about to change! Cova is bringing back the fun-filled, value-priced educational wine classes like the ones conducted years ago.

In addition to these classes, we will continue to hold our monthly Ultra-Premium Wine Dinners and our quarterly Cova Boot Camp. Look for these latter events in March. Time to Experience Cova's Highly Allocated Wines
This is the time of year when many wineries release some of their most highly sought after gems. Of these, some are cult wines and others are limited production highly rated treasures. Many are listed in the "Top 100 Wines of the World" by a popular wine periodical. Usually, by the time this list is published the vast majority of the wines are sold out. However, at Cova, because we taste myriad wines yearly, we usually know what wines will make the list before it's published, and stock up on them. In particular, we knew that the wine we poured by the glass for weeks, the 95-Point Tignanello Cabernet Blend would be in the top 5, so we stockpiled dozens of cases so that everyone would get an opportunity to try this delicious juice. So, if you want one of the "world's best wines", we have it available while quantities last (limit 3 bottles per customer please).

Below, you'll find a partial list of other allocated wines that are available at Cova now! Some are in the Top 100, while others are cult wines that are generally only available in restaurants.

Cova's Gourmet Cheese & Charcuterie Platters To Go!
Planning a party? Our customized gourmet cheese & charcuterie platters are now a permanent feature at Cova! We can usually customize one with 2 hours notice. Platters are available in both 12-inch (serves 2- 4) for $29.99 or 16-inch sizes (serves 6-10) for $49.99. Each platter comes with 4 different artisanal cheeses and 4 cured meats. The large platter also features our homemade rillette. Please see below for cheese & charcuterie selections. Call in your order at 713-838-0700. Please no orders after 4:00pm.

2006 Oliverhill Shiraz "Jimmy Section"
This complex, lush, purple/black hued beauty is one of my perennial favorite Aussie Shirazes. It somehow manages to always pack in tons of flavor, yet remain elegant and stay light on its feet. I call it the "sumo wrestler ballerina"! The wonderful balance of ripe fruit, featuring blackberry, boysenberry and black plum along with suave tannins and Mclaren Vale earth, really make it stand out from those overripe and flabby Aussie fruit bombs. Notes of bittersweet chocolate and hints of spice sneak in on the long persistent finish. You can enjoy this on its own or try it with firm strong cheeses, venison, lamb or beef with a pungent gorgonzola sauce. 94 Points M.H.
